Sweet Potato Smoothie

This is a variation of our dairy free smoothies base recipe. This delicious sweet potato smoothie is creamy, sweet, and tastes like sweet potato pie!

Ingredients

  • 1 cup unsweetened soy milk
  • 1 cooked, cooled, and peeled medium sweet potato (~1 cup)
  • 1 large frozen ripe banana (~1 cup)
  • ½ teaspoon cinnamon
  • 6-8 ice cubes (optional)

Instructions

  • Place all ingredients in a blender and puree. Enjoy!

Notes

To roast a sweet potato, preheat your oven to 400º. Prick the sweet potato several times with a fork and place on a foil lined sheet pan. Roast for 45 minutes, or until easily pierced with a fork.
