Base Recipe
3cupsloosely packed leafy greens
2-3ouncesprotein
½-1cupvegetables(fresh, cooked, and/or pickled)
½cupdiced fresh fruitand/or 2 Tablespoons dried
2-3Tablespoonsdressing or vinaigrette
Salt & pepper to taste
Additions to YOUR taste
¼cupcooked whole grain
2-3Tablespoonscrumbled or shredded cheese
2Tablespoonsolives
2Tablespoonspomegranate seeds
2Tablespoonstoasted nuts or seeds
1-2Tablespoonschopped fresh herbs
Instructions
Place all ingredients in a medium bowl. Have fun composing artistically or toss to combine. Enjoy!
Notes
For better texture, lightly chop or shred the leafy greens first. No one likes choking on spinach stems!
