Garlic Parmesan Green Beans

Ingredients

  • 1 pound haricots verts
  • 2 Tablespoons extra virgin olive oil
  • ¼ cup raw slivered almonds
  • 2 garlic cloves, finely chopped (~1 Tablespoon)
  • 1 Tablespoon lemon juice (~½ medium lemon)
  • Salt & pepper to taste
  • 2 Tablespoons grated parmesan cheese
  • 1 Tablespoon fresh, chopped parsley

Instructions

  • Steam haricots verts in a steamer basket for 8-10 minutes or until crisp tender and bright green. If you don't have a steamer basket, place ~1" of water in a large pot. Add green beans, bring water to a boil, cover, and cook for 8-10 minutes.
  • While the haricots verts are cooking, heat a large skillet over medium low heat. Add olive oil. Add almonds and cook for ~3 minutes or until almonds begin to turn golden. Add the garlic and sauté for ~1 minute.
  • Turn off heat, add haricot verts to the pan, and toss to coat. Squeeze lemon juice on top. Season to taste with salt and pepper.
  • Transfer haricot verts to a serving dish. Sprinkle parmesan and parsley on top. Enjoy!

Notes

Fire, fat, food! Heat your pan, heat the oil, then add the almonds. It’s important to take time between each step to promote maximal flavor!
