If you don’t have a steamer basket, add ~1 inch of water to a large pot, then add the haricots verts/green beans. Bring to a boil, cover, and steam for 8-10 minutes or until crisp tender and bright green. Be careful not to overcook!

Ingredient Substitutions
- Haricots Verts: substitute regular green beans. You can also substitute frozen haricots verts/green beans. We don’t recommend using canned green beans in this recipe; it just isn’t the same!
- Extra Virgin Olive Oil: substitute avocado oil, although the flavor will be different. Do not use vegetable oil, as this is not a heart-healthy oil.
- Slivered Almonds: substitute raw sliced almonds, chopped pecans, or raw pumpkin seeds.
- Garlic: substitute 1 teaspoon garlic flakes, ½ teaspoon granulated garlic, or ¼ teaspoon garlic powder.
- Lemon Juice: substitute apple cider or red wine vinegar.
- Grated Parmesan: substitute pre-shredded parmesan cheese.
- Chopped Parsley: substitute fresh chopped basil.

Haricots verts are thinner than standard green beans, so their flavor is more delicate and they cook faster. Why steam rather than boil? When you boil vegetables, you lose water-soluble vitamins to the water. That’s okay with a soup or stew (because you don’t get rid of the liquid), but if you are discarding the water, you are losing out on some great nutrition!
Extra Virgin Olive Oil
Extra virgin olive oil contains lots of heart-healthy monounsaturated fatty acids and polyphenols which may reduce inflammation. Additionally, certain nutrients require fat for absorption; using extra virgin olive oil in recipes can boost the nutritional quality of a dish. (1, 2)

Garlic Parmesan Green Beans
Ingredients
- 1 pound haricots verts
- 2 Tablespoons extra virgin olive oil
- ¼ cup raw slivered almonds
- 2 garlic cloves, finely chopped (~1 Tablespoon)
- 1 Tablespoon lemon juice (~½ medium lemon)
- Salt & pepper to taste
- 2 Tablespoons grated parmesan cheese
- 1 Tablespoon fresh, chopped parsley
Instructions
- Steam haricots verts in a steamer basket for 8-10 minutes or until crisp tender and bright green. If you don't have a steamer basket, place ~1" of water in a large pot. Add green beans, bring water to a boil, cover, and cook for 8-10 minutes.
- While the haricots verts are cooking, heat a large skillet over medium low heat. Add olive oil. Add almonds and cook for ~3 minutes or until almonds begin to turn golden. Add the garlic and sauté for ~1 minute.
- Turn off heat, add haricot verts to the pan, and toss to coat. Squeeze lemon juice on top. Season to taste with salt and pepper.
- Transfer haricot verts to a serving dish. Sprinkle parmesan and parsley on top. Enjoy!
