How to Make Vinaigrette

A basic vinaigrette dressing can turn a boring salad into a delicious side or entrée. Making your own homemade vinaigrette ensures that the ingredients in your dressing are natural and healthy – no strange additives allowed!

Making a simple salad dressing at home is easy once you know the proper oil-to-vinegar ratio and mixing method. We recommend using a 3:1 oil-to-vinegar ratio, although other sources may suggest a 4:1 ratio.

Use freshly minced garlic (not the kind in a jar), extra virgin olive oil, vinegar/citrus juice, kosher salt, and spices and herbs to taste for a healthy salad dressing. For optimal freshness, make smaller batches and store in the refrigerator for 1-2 weeks.

In this video, we demonstrate the traditional whisking technique for making homemade salad dressings; pouring the oil slowly helps emulsify the vinegar and oil better. You can also shake the ingredients together in a mason jar or salad dressing shaker.

There are endless types of vinaigrettes. Different oils, vinegars, spices, and herbs affect the flavor. Once you’ve learned this technique, check out our base recipe, then try out these basic vinaigrette variations:

Once you master this skill, toss it with a simple green salad, or add it to warm farro or brown rice to make a satisfying grain bowl!
